Figure out tracking solution

We have two options here

1. "Calibrate" the text scanning to a certain bicycle speed (This will result in compression/stretching if speed varies. Pixels can potentially overlap or become lines)

2. Use a simple encoder that tracks the wheel (3D printed TPU roller on encoder resolves "position" along the text that is being decoded for printing)
