Bump Version to 5.6.1 and the package-validation baseline to 5.6.0, name 5.6.x (the latest release on NuGet) in the supported-versions table, and add a 5.6.1 heading to every changelog, so each 5.6.1 fix PR adds its line under it. The heading's date is set again in the commit that gets tagged. Closes #200 Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
