feat(chains): Avalanche C/P-Chain display names - #55

AVALANCHEC/AVALANCHECT and AVALANCHEP/AVALANCHEPT now show friendly names instead of title-cased raw spec names. Icons already alias to avalanche.svg; the chains appear automatically once live on-chain.

Summary
Adds friendly display-name overrides for the Avalanche C-Chain and P-Chain specs (paired with the gateway/ansible additions that bring them online).
