docs: reflect Cognito auth deployed live in PROJECT-STATUS.md - #15

Real authentication is deployed and verified (unauthenticated requests now get 401). Updates the live deployment reference with the User Pool IDs, marks auth done in the "in progress" list, and flags two new known gaps: the demo plan's script still describes the pre-auth link flow, and the seed scripts aren't Cognito-aware.
