docs: adopt the Spatial AI logo set and brand colours - #215

City2TABULA's logo now follows the Spatial AI organisation pattern,
with the project in violet. The repository carries only the files it
uses.
- README header: the lockup in a <picture> element, light and dark
versions following the viewer's theme.
- MkDocs header: the dark lockup, which draws the name in the brand
colours ("City2" white, "TABULA" violet), at 2rem tall so its small
top line stays readable. The plain-text site name is hidden where
the logo shows; below 76.25em Material moves the logo into the
drawer and the text name stays.
- MkDocs favicon: favicon.ico (16, 32 and 48 px).
- MkDocs colours: header in brand ink #16191c in both schemes; links
and accents violet, #6d4ae0 on the light ground #f7f5f1 (5.2:1) and
#a08bff on #16191c (6.41:1). All three palette entries, including
the system-preference one, use the custom colours. extra_css already
named docs/stylesheets/extra.css, which did not exist.
The six old logo files are removed; nothing references them.
.gitignore's city2tabula-* rule, meant for build outputs at the root,
is anchored there, as it also matched the new logo files.

Adopts the Spatial AI logo set for City2TABULA (violet) and matches the docs colours to it.
