Introduce schema v3 with products, sales, receipts, stock adjustments, and cancellation tracking. This adds the Products & Sales workflow to the desktop app, including Tauri commands, migration logic, encrypted backup/restore coverage, and a new React UI for catalog management and stock operations while keeping journal entries and expected capital synchronized.

Build versioned release installers from a
vX.Y.Ztag: macOS DMGs for Apple Silicon and Intel, and a Windows x64 NSIS EXE. All three native builds run the frontend/Rust tests and Clippy before creating a draft GitHub release with the installers and SHA-256 checksums. The release version is 0.3.0 across npm, Tauri, Rust and lockfiles. Version/tag checks reject mismatches, all jobs build the same commit, and the uploader resolves annotated tags, reuses existing drafts, and refuses to overwrite published releases. The macOS packaging script checks its bundle version and verifies the DMG. The README documents tagging, manual reruns and signing status.
Validation: all three native installer builds passed, including 17 frontend tests, 35 Rust tests, Clippy and the frontend build on each platform. Both downloaded DMGs passed checksum, bundled version, architecture and ad hoc signature checks. All three installers and SHA256SUMS.txt are attached to the draft v0.3.0 release, with matching local/GitHub SHA-256 digests. Actionlint and version mismatch checks pass.
The initial tag run completed every build but failed at the final upload due to its GitHub tag lookup. The corrected upload script was run successfully against GitHub, including a second run that reused the same draft. The tag remains pinned to the original build commit; this PR contains the upload and concurrency fixes for subsequent runs.
