test(ci): pin SOTTO_TEST_VERSION to v0.5.0 - #30

Install the current v0.5.0 release in the smoke matrix so missing artefacts on new platforms are noticed, and reword the header comment so it no longer implies v0.4.0 is the version under test. Fixes getsotto#12 Signed-off-by: Louis Deconinck <louis.dck@gmail.com>

The pin tracks the current release so the matrix notices missing artifacts on new platforms. v0.5.0 publishes all five matrix targets (
x86_64/aarch64Linux,aarch64/x86_64macOS,x86_64Windows) plusSHA256SUMSand sigstore bundles, soinstall-and-verifystays green.Left unchanged per the issue: the invalid-version matrix values and the
"such as v0.4.0"expected-error strings — those are literal output ofscripts/validate-version.{sh,ps1}andscripts/install.{sh,ps1}, so editing them would break the rejection tests.Testing
YAML parses cleanly; v0.5.0 release assets verified for all matrix targets.
