Correct the 2.6.0 date in the changelog - #683

The section was dated 2026-08-27. The merge commit and the published release are both 2026-09-03, and this changelog dates a release by the day it was published — 2.5.3's section says 2026-08-14 against a release published 2026-08-14. The wrong date came from the release commit, so the tree at v2.6.0 carries it. The tag is not being moved for a date: the release notes link to CHANGELOG.md on main, which is the copy people read, and that is the one corrected here.
