aws: Generate NodePool requirements for instanceRequirements

Updates the Karpenter addon to support mixedInstancesPolicy.instanceRequirements specified in instance groups because, really, who wants to maintain a massive list of instance types in mixedInstancesPolicy.instances? 🙃
