Docs: fix fine-tune README bullet and inference --model help text - #77

Conversation
- The README tutorial list labeled integrate-with-a-python-pipeline.md as
'Fine-tune a model'; relabeled to match the tutorial and added a pointer
to the actual fine-tuning guide (how_to/training/fine-tune-from-a-checkpoint.md).
- The shared --model option in the process CLI reused the finetune help
string ('to fine-tune from'); now says 'to run inference with'.

Two small fixes found while reading the 2.0 docs:
README tutorial list: the bullet labeled "Fine-tune a model" points to
docs/source/tutorials/integrate-with-a-python-pipeline.md, which is about using BatDetect2 from Python and does not cover fine-tuning.
