test: validate esignet-standalone-2.0.0 core deployment (Go eSignet) #389

Summary

Deploy the esignet-standalone-2.0.0 profile end-to-end via helmsman_esignet.yml
and validate the Go rewrite of eSignet works correctly on its own — independent of
onboarding or test rigs.

Scope

• Deploy all 3 instances (esignet-mock, esignet-mosipid, esignet-sunbird) plus
  OIDC UI, mock-relying-party service/UI, and supporting infra (Postgres, Redis,
  Kafka, Keycloak, SoftHSM, Captcha).
• Confirm all pods reach Running/Ready state.
• Confirm eSignet's core OIDC flows (authorize → authenticate → token → userinfo)
  work against each instance.
• Confirm parity with the existing esignet-standalone (Java) profile — same
  namespaces, hostnames, and behavior, per the profile's isolation design.
