test: validate apitestrig suite against esignet-standalone-2.0.0 #391

Summary

Validate the apitestrig suite (helmsman_testrigs.yml, profile=esignet-standalone-2.0.0)
against the esignet-standalone-2.0.0 profile.

Scope

• Run helmsman_testrigs.yml with profile: esignet-standalone-2.0.0.
• Confirm esignet-apitestrig, esignet-mosipid-apitestrig, and
  esignet-sunbird-apitestrig cronjobs all complete and pass (and
  esignet-signup-apitestrig/signup-uitestrig if signup is deployed).
• Exercises the HELMSMAN_TESTRIGS_GUIDE.md documentation fix added in Add esignet-standalone-2.0.0 profile (Go eSignet) support #311 —
  report back if any step in that doc doesn't match actual behavior.
