Add more targets in CI? #110

Yeah, this could be valuable, specially now that we have a more integrated test. Please go ahead and add at least one for each of the three main OS, and consider Arm64/x86_64. I believe we can rely on the latest OTP/Elixir pair for those tests, so the matrix won't be enormous.
Hey @philss should CI run more targets to validate all possible edge cases? It was odd to see #107 passing on Mac but failing on Linus, and we have not tested ARM and Windows either.
I can open a PR if you want but all good if this is not necessary :)
