v5.1.0 only needs event logs from per-network checkpoints, so document the new retention blocks and replace the Keeper-only Reth log filter with a global receipts limit.

Updates the operator docs for v3-operator v5.1.0.
v5.1.0inlaunch-operator-service.mdxandstart-operator.mdx.staking-nodes.mdx: v5.1.0 only needs event logs from per-network checkpoints, not the full history since Keeper deployment. The page now lists the new retention blocks (Ethereum 25,900,000, Hoodi 3,580,000, Gnosis 48,100,000). Erigon uses the new block number. For Reth, the Keeper-only--prune.receiptslogfilteris replaced with a global--prune.receipts.before. A note says versions before v5.1.0 still need the full log history.The legacy
operator-service-v3pages are unchanged.
